Sourdough Kolaches Recipe | Resep Kolaches dengan Sourdough)
Kolache (ko-lah-chee) is a Czech pastry that is very popular in Texas. Traditionally, kolache is pastry with fruit filling. However, it has evolved to a point where people put meat as filling. The ones I make here are filled with an assortment of homemade fruit preserves, like blueberry and pineapple preserves, lemon curd, and orange marmalade.
Building the dough is an easy process. Dough is kneaded slightly longer than usual kolache recipes to incorporate some air which results in lighter crumbs. You want mostly smooth dough with some tear, and it shouldn’t stick to your hands. Actually the dough is really nice to handle because of the significant amount of butter.

Aslinya, kolache diisi buah-buahan tapi sekarang sudah banyak isian lainnya seperti daging. Punya saya ini saya dengan selai buah-buahan yang saya buat sendiri. Kalau buat sendiri, selainya bisa lebih kental daripada dapat beli.
Untuk membuat adonan kolache versi sourdough ini, cukup uleni semua bahan sampai setengah kalis saja karena tujuannya hanya untuk menambahkan sedikit udara biar pastry-nya lebih empuk. Biasanya resep kolache tidak menganjurkan untuk menguleni adonan; cukup dicampur rata. Karena mengandung banyak mentega, adonan tidak lengket di tangan meskipun tidak diuleni sampai kalis.

Cara membuat:
Knead all levain ingredients until fully combined and let ferment until tripled.
Uleni bahan biang sampai merata lalu diamkan sampai mengembang 3x lipat.
Combine levain and all main ingredients. Knead until dough clears sides of mixing bowl but still sticks to bottom. Dough should be mostly smooth and doesn’t stick to your hands. Cover and let sit until doubled in volume.
Campurkan biang dan bahan utama. Uleni sampai tidak lengket di sisi mangkok mixer tapi masih lengket di dasarnya. Adonan setengah kalis dan tidak menempel di tangan. Tutup dan diamkan sampai mengembang 2x lipat.
For streusel topping: rub together all ingredients until resembles bread crumbs. Refrigerate until ready to use.
Untuk topping streusel: remas-remas semua bahan sampai bergerindil. Simpan di kulkas sampai siap digunakan.
Divide and shape dough into 16 balls. Place on two large parchment-lined baking pans; cover and let rest until light and puffy, 60-90 minutes. Preheat oven to 350 F (180C).
Bagi dan bentuk adonan menjadi 16 bulatan. Tempatkan di dua loyang besar yang dialasi kertas roti. Tutup dan diamkan sampai terasa ringan dan mengembang, 60 sampai 90 menit.
With floured 2-inch diameter cup, make an indentation in the center of each dough ball. Brush edges with egg wash mixture and sprinkle with streusel topping. Fill indentation with about 20 grams fruit preserve. Bake for about 22 minutes or until golden.
Buat cekungan di tengah tiap bulatan adonan dengan menggunakan cangkir berdiameter 5 cm yang ditaburi terigu. Olesi pinggiran dengan bahan olesan dan taburi streusel topping. Isi cekungan dengan selai, masing-masing sekitar 20 gram. Panggang selama kurang lebih 22 menit atau sampai keemasan.
