Sourdough Brownies Recipe | Resep Brownies Sourdough
If you have sourdough starter, it’s more than likely that you have some sourdough discard. I myself always have discard eventhough I try to keep it minimal, about 20-40 grams each day. Most of the time, it ends in our pancake batter. But some other times, I feel adventurous and try new recipes with it, just like this brownies. It was a hit in my house from the first time I made it. It’s thick and fudgy with crackly top.
If you don’t have sourdough discard, you can replace it with 60 gram all-purpose flour and 1 egg.
Memanfaatkan sisa adonan (discard) saat feeding starter, terciptalah resep ini. Sekali saya membuatnya langsung berhasil dan disukai semua orang di rumah. Kulitnya renyah meskipun tidak mengkilat, sedangkan dalamnya sangat legit rasa cokelatnya. Meskipun bahannya bukan yang mewah (DDC dan sebagainya), rasanya bisa disandingkan dengan brownies yang memakai bahan premium.

150 grams vegetable oil

150 gram minyak sayur
|
60 grams Dutch-processed cocoa powder
|
60 gram cokelat bubuk
|
150 grams powdered sugar
|
150 gram gula bubuk
|
75 grams brown sugar
|
75 gram brown sugar
|
2 eggs
|
2 butir telur
|
120 grams sourdough discard
|
120 gram sourdough discard
|
1.5 tsp vanilla extract
|
1.5 sdt vanilla extract
|
1/4 tsp baking soda
|
1/4 sdt baking soda
|
1/4 tsp salt
|
1/4 sdt garam

How to:
Cara membuat:
Heat oil until it reaches around 150F/65C (quite hot but not smoking). Add cocoa powder; stir until combined. Cool completely.
Panaskan minyak hingga mencapai sekitar 65C (sudah panas tapi belum berasap). Masukkan cokelat bubuk; aduk rata lalu diamkan sampai dingin.
Whisk together powdered sugar and brown sugar. Add eggs; whisk until thick and pale, about 5 minutes. Whisk in half of the oil mixture until well mixed.
Aduk rata gula bubuk dan brown sugar. Tambahkan telur. Kocok sampai kental dan pucat, sekitar 5 menit. Masukkan setengah campuran minyak-cokelat; kocok rata.
Add sourdough discard; whisk until combined. Add remaining oil mixture, vanilla, baking soda and salt. Whisk thoroughly.
Tambahkan sourdough discard; kocok rata. Masukkan sisa campuran minyak, vanilla, baking soda dan garam.
Place batter in parchment-lined 8-inch (20cm) square baking pan. Bake at 350F (180C) for 30 minutes or until done.
Taruh adonan di loyang ukuran 20x20cm yang dialasi kertas roti. Panggang dengan suhu 180C selama 30 menit.
