Cara membuat:
Mix together all dough ingredients until mostly combined. Knead just until dough is thoroughly hydrated and cohesive, about 5 minutes. Rest until doubled in volume (mine; 5 hours at 80F/26C).
Aduk semua bahan adonan sampai hampir rata. Uleni sampai lembab menyeluruh dan adonan menyatu, sekitar 5 menit. Diamkan hingga mengembang 2x lipat (punya saya: 5 jam di suhu 26C).
Divide dough into 6 portions; shape each portion into a rough log. Cover and rest for 15-30 minutes until dough is relaxed. Roll dough into about 28 inch/71 cm ropes. Shape ropes into U; criscross in the middle of U; fold ends toward bottom. Place in floured baking pan. Cover and rest until light and puffy, about 30 minutes.
Bagi adonan jadi 6 bagian; bentuk menjadi balok. Tutup dan istirahatkan selama 15-30 menit sampai adonan lentur. Bentuk tiap bagian adonan menjadi seperti tali sepanjang 71 cm. Bentuk jadi huruf U lalu silangkan kedua bagian yang tegak. Lipat ujung-ujungnya ke arah bawah. Tempatkan di loyang yang ditaburi tepung. Tutup dan diamkan sampai terasa ringan dan mengembang, sekitar 30 menit.
Line another large baking pan with parchment paper. Bring water to a boil; stir in baking soda until dissolved. Boil pretzels for 15 seconds each side; place on parchment-lined baking pan. Sprinkle with coarse salt.
Alasi loyang lainnya dengan baking paper. Didihkan air dan masukkan baking soda; aduk sampai larut. Rebus pretzel dengan api sedang cenderung kecil selama 15 detik untuk setiap sisinya. Taruh di loyang yang di alasi baking paper tadi. Taburi dengan garam kasar.
Bake at 400F/200C for about 15-20 minutes until well browned. Brush with melted butter.
Panggang dengan suhu 200C selama 15-20 menit sampai warnanya cokelat tua. Olesi mentega cair.
